Baking Day

Sunday is always my big baking day. I try to use up the fruit from the week that needs to be eaten and usually my girls are worn out from the week and take extra long naps. This gives me time in the kitchen to get things done. Without my helpers!

Strawberry Muffins



Ingredients:
1/4 c. oil
1/2 c. milk (we use light soy)
1 egg
1/2 t. salt
2 t. baking powder
1 t. vanilla
1/4 c. sugar
1/4 c. brown sugar
1/2 c. unsweetened applesuace
1 3/4 c. all purpose flour
1 heaping cup of fresh strawberries

First, I chop my strawberries very small so that little girls cannot see them and say, "I not like it!" After chopping my strawberries, I usually let them sit out to become nice and juicy while I work on everything else. Mix all of the wet ingredients together first, and then add in the dry ingredients slowly. Lastly, fold in the strawberries. Cook at 350 degrees for 15 minutes (for mini-muffins, may take longer for regular sized). Make sure to check them frequently depending on the size muffin you make.This made 24 mini-muffins, which my girls prefer.

Banana Bread


Hadley loves this banana bread that my mama makes! So, I had to call Gran and get the recipe for my girl. This is huge because Gran is not what you would call a cook (but we still love you!).

Ingredients:
1 stick butter
1 c. sugar
1/2 t. salt
2 eggs
1 t. vanilla
1 1/2 c. flour
1 t. baking powder
1 t. baking soda
3 bananas

Melt butter and mix with sugar. Add in the rest of the ingredients, except the bananas. Mix well and fold in bananas. Divide between two loaf pans and cook on 350 degrees for 50 minutes.
